I thought I would share another recipe from the Chesapeake Bay area.

This delectable She Crab Soup is made from the sweet, delicate meat of the she crab. A bit of roe adds richness and flavor. Its elegant bisque-like creaminess will delight your senses.

12 Female Crabs, all the meat picked plus
Orange Roe
8 tablespoons butter
1 small onion finely diced
2 tablespoons minced shallots
3 tablespoons flour
12 cups fish stock (a flavorful vegetable or chicken stock may be substituted for the fish stock if necessary)
1 cups heavy cream
1 teaspoon salt
½ teaspoon freshly ground pepper
2 teaspoon Worcestershire Sauce
1 dash Tabasco Sauce (optional)
½ cup dry sherry
1 lemon freshly squeezed

Purchase one dozen female crabs already steamed or buy them live and steam them yourself. Pick the crabs for all their meat and reserve the orange roe. In a sauté pan, melt 4 tablespoons butter and sauté the onion and shallots until just tender.

Whisk in the flour and cook over medium heat for 2 minutes while stirring, taking care not to brown the flour mixture. Slowly whisk in the heavy cream and stock. Add in the salt, pepper, Worcestershire Sauce and Tabasco (if using). Cook on medium until the soup thickens, about 15 - 20 minutes, stirring frequently.

While you are thickening the soup, melt 4 tablespoons of butter in a sauté pan and toss the crabmeat and roe until heated through, 3-4 minutes. Once the soup has thickened add the crabmeat mixture and stir. Add the sherry and lemon juice and simmer for several minutes until heated through.

Serve with a light salad of mixed greens and French bread.

Back in my first post and welcome message, I promised some recipes, so its time I get to it — here comes the first one!  This is a recipe that I’ve developed over the years that has evolved from  several crab cake recipes I had (one of which is from a real live Chesapeake Bay native!).  Crab cakes are not at all hard to make (though checking for pieces of shell is a bit tedious) and they make such a special meal.  My husband and daughter love crab cakes — I’m very popular on the days I make these for dinner.

There is an Italian custom of having 7 different kinds of seafood on Christmas Eve (no one seems to know exactly what the origin of that tradition is - do you?), so crab cakes are often our main course for Christmas Eve –  and a very festive entree they are!  (By the way, if you want an even quicker way to make crab cakes, we carry a crab cake mix from Bay Beyond that is included in most of the gift baskets in our Bay Bounty line of gourmet gift baskets).

Blue Crab Cakes

There are dozens, perhaps hundreds of recipes for crab cakes - every crab-loving family has their favorite. What I present here is a basic, traditional and delicious recipe made with the finest grade crab meat.

1 egg
½ cup of finely broken cracker crumbs (use a high quality cracker with a delicate flavor for the best results
3 tablespoons mayonnaise
1 tablespoon fresh squeezed lemon juice
½ teaspoon freshly ground pepper
2 teaspoons Chesapeake Bay Seasoning (such as Old Bay)
1 pound Jumbo Lump Crabmeat
1 dash of Tabasco (optional)

Jumbo Lump Crabmeat should have very few pieces of shell, however you should pick through it carefully and remove any pieces you see (or feel). Handle the crabmeat gently as you do this. Place the crabmeat in a large mixing bowl and sprinkle the fine cracker crumbs over it tossing very gently until the crabmeat is covered evenly.

In a second bowl, beat the egg and add the mayonnaise, lemon juice, bay seasoning and ground pepper. Wisk these ingredients together until the mix is a bit frothy. Pour the mix over the crab meat and gently toss until well mixed. Form the crab cakes by hand taking care not to over handle or pack too tightly - the cakes should be as loose as possible while still holding their shape. (If the cakes are not holding their shape, you can add additional cracker crumbs, but try to add as little as possible). This mix will yield 4 large crab cakes or 6 slightly smaller ones (8 appetizer size).

Sauté the crab cakes in Extra Virgin Olive Oil until golden brown on both sides (8 to 10 minutes). You can also broil the crab cakes if you prefer, 4 to 5 minutes on each side until golden brown.

Serve with lemon slices or tartar sauce and enjoy!

We carry a larger-than-most line of housewarming gift baskets as a number of our clients are real estate agents and regularly use our gourmet gift baskets as closing gifts. We are planning to add two new gift baskets to this collection this spring, one with a gardening theme and another with a beach or pool theme. Each of these unique housewarming gift baskets contains a “gift within a gift” - meaning that there is a lasting gift incorporated into the design.

Our signature line of gifts, called Bay Bounty Gift Baskets, have captured the flavors and traditions of the Chesapeake Bay.  They are all filled with products (produced by companies in and around the Bay area) such as Crab Cake Mix, She Crab Soup, Bay Seasonings, Chesapeake Chocolates and more!  And…we also donate a portion of the profits from this line of  gifts to the Chesapeake Bay Foundation .

The Chesapeake Bay is over 200 miles long and encompasses 6 states. Over 16 million people live in its watershed and it supports 3,600 species of animal life.  But its health is in jeopardy.  The Chesapeake Bay Foundation is dedicated to saving this national treasure and together we can do our small part to help with the donations from our Bay Bounty Gift Baskets.

The Bay Bounty line has been quite popular, so much so that we expanded the line recently to provide greater variety and price options. We’ve added a lovely gift basket called Sanibel Sands Chowder Mug that includes a beautiful soup mug and plate with a raised seashell motif, chowder, french truffles and more. I had initially assumed that it would mostly be popular in the warm weather months when real bushels of steamed blue crabs are so popular in the Chesapeake Bay watershed, but this little gift has held its appeal year round.
